Pork Tenderloin with Mustard Cream Sauce

Ingredients:

  • For the pork tenderloin:

    • 2 pork tenderloins (about 1 pound each)
    • 2 tablespoons ghee or clarified butter
    • 1 teaspoon sea salt
    • 1 teaspoon black pepper
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
  • For the mustard cream sauce:

    • 1 cup heavy cream
    • 2 tablespoons Dijon mustard
    • 1 tablespoon whole grain mustard
    • 1/2 cup chicken broth
    • 1 clove garlic, minced
    • 1 tablespoon butter
    • 1 teaspoon fresh thyme, chopped (optional)

Instructions:

  1. Prepare the Pork Tenderloin: 1.1. Preheat your oven to 375°F (190°C). 1.2. Season the pork tenderloins with sea salt, black pepper, garlic powder, and onion powder on all sides.

  2. Sear the Pork Tenderloin: 2.1. Heat the ghee or clarified butter in a large oven-safe skillet over medium-high heat. 2.2. Add the pork tenderloins and sear them on all sides until they are golden brown, about 2-3 minutes per side. 2.3. Transfer the skillet to the preheated oven and roast the pork tenderloins for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

  3. Make the Mustard Cream Sauce: 3.1. While the pork is roasting, prepare the sauce. In a saucepan, melt the butter over medium heat. 3.2. Add the minced garlic and sauté until fragrant, about 1 minute. 3.3. Pour in the chicken broth and bring to a simmer. 3.4. Stir in the heavy cream, Dijon mustard, and whole grain mustard. 3.5. Let the sauce simmer for 5-7 minutes, stirring occasionally, until it thickens slightly. 3.6. Season with salt and pepper to taste and add the chopped fresh thyme if using.

  4. Serve: 4.1. Remove the pork tenderloins from the oven and let them rest for 5 minutes. 4.2. Slice the pork tenderloins and arrange them on plates. 4.3. Spoon the mustard cream sauce over the sliced pork.

Tips:

  • For an extra burst of flavor, you can add a splash of white wine to the sauce along with the chicken broth.
  • Serve with a side of sautéed spinach or steamed asparagus for added nutrients if you include some vegetables in your diet.
  • Garnish with additional fresh thyme or parsley for a touch of color and freshness.
